Preheat oven to 220°C/200°C fan-forced. Heat 1 tablespoon oil in a large frying pan over medium-high heat. Cook chicken, in 2 batches, for 2 to 3 minutes each side or until browned and cooked through. Transfer to a plate.
Heat remaining oil in pan. Add onion and garlic. Cook, stirring occasionally, for 2 minutes or until onion has softened. Add peppers and eggplant. Cook, stirring, for 1 minute. Add pasta sauce and Spicy Red sauce. Bring to the boil. Stir in basil. Season with salt and pepper.
Bake for 10 to 15 minutes or until top is golden. Serve topped with basil.

Well since IB can be very stressful baking from scratch isn’t always easy. So I kinda cheated!! #imsorry So I used Betty Crockers Devils Food cake mix and I made valentines cup cakes with it. So if using the mix just follow the instructions at the back. but it you want to challenge yourself and do it yourself, here are Instructions
- 50g/2oz best-quality cocoa powder,sifted
- 100g/4oz dark muscovado sugar
- 250ml/8fl oz boiling water
- 125g/4½oz soft unsalted butter, plus some for greasing
- 150g/5oz caster sugar
- 225g/8oz plain flour
- ½ tsp baking powder
- ½ tsp bicarbonate of soda
- 2 tsp vanilla extract
Bake for 35 minutes at 180 degrees Celsius. And I just used Butter Creme Icing and Oreos for final touches 💗💕 #ihopethismakesyouhungry

*For this I cheated and used a brownie mix since i found a special edition brownie mix! Its Betty Crocker’s peanut butter premium brownie mix with hershey’s (Hershey’s cocoa and Reese’s peanut butter flavoured chips in the mix) (:
If you do decide to be lazy and cheat be sure to follow the instructions on the box. After you have completed making the brownie according to the mix, then follow the steps of the actual Rocky Road Brownie recipe.
Rocky Road Brownie Recipe:
*you can also place the marshmallows underneath the chocolate frosting :)

Had some left over mix so I made muffins ☺️💕
Ingredients (I made 2 so I just doubled everything if thats what you want to do)
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup sugar
2/3 cup diced walnuts
2/3 cup mini chocolate chip
1 teaspoon vanilla extract
3 large ripened bananas
1/2 cup butter
2 whole eggs
Hand mix flour, baking powder, baking soda, sugar, walnuts, chocolate chips, and vanilla extract in mixing bowl until chocolate chips and walnuts are evenly spread out throughout mixture.
In another bowl, mash bananas and add to the main mixing bowl.
Soften the butter (I microwave for 20 seconds) and add to the main mixing bowl.
Add two whole eggs to main mixing bowl.
Mix all ingredients together by hand until it has a batter-like consistency.
Pour into greased loaf pan.
Let mixture set for at least 20 minutes before baking (Preheat the oven to 180 C).
Bake at 180 C for 65 minutes (may take longer depending on the oven and altitude).
When finished baking, it is best to let it set overnight before serving.
An optional recipe: Instead of the chocolate chips, use 1 1/2 tsp of cinnamon to make Cinnamon Banana Nut Bread.
